Café Bartine opens on the Herengracht
Casper Talsma and Nils Klinkspoor open a small all-day café: great coffee, honest breakfast and lunch, natural wine in the evening.
- 2020
The Lockdown Bakery
When the first lockdown closes the café, the kitchen turns to bread. Sourdough loaves go out the door; baker Olivier van der Ree joins. The neighbourhood notices.

141 neighbours chip in
A CrowdAboutNow campaign to build a real bakery raises €110,000, 183% of the goal, from 141 investors, most of them regulars. It pays for the ovens, the shop and the first stock.

Two shopfronts in the Zeeheldenkwartier become an open-kitchen bakery on one side and a coffee bar and market on the other.

The craft

Our sourdough is naturally leavened, with no commercial yeast, and fermented slowly so the flavour has time to develop and the bread is easy to digest. The croissants are laminated by hand. Nothing comes in frozen.

The people
small team,
big mornings.
Bakers start before dawn. Baristas open at eight. Front of house keeps the line moving and the tables turning with a smile. We’re almost always looking for people who care as much as we do.
